The purpose of this work is the elaboration of the design of a machine to improving production process of puff pastry business oriented “The bakery”, moreover of a approaches technical-economic to the construction of this; in order to carry out this, It had to: identify and characterize the process variables, to put up design alternatives and selection of the better proffer, to realize the corresponding calculations of the approach selected and that it complies with the engineering requirements and to budget the manufacturing costs, after of this it came to the conclusion that the best proffer is the N°2 due to its greater economy and better compliance with the requirements by customers, beside that this equipment can cost around $ 106.705.108 and which is very profitable at the time of acquiring it by the company since it can recover its investment in a year in addition to increasing its production and also its sales.
