The purpose of this research work is to describe criteria for the implementation of good manufacturing practices for obtaining specialty coffee in the Versailles farm in Ibagué-Tolima, whose main activity is the production of this grain; reference will be made to all the productive stages, to achieve this a description will be made of the process in the harvesting, classification, pulping, fermentation, washing, drying and storage [1]. After this, it is important to describe and analyze the different standards created for the care of this product, which must be given by the regulatory bodies and complied with by our growers, since they are the main beneficiaries of obtaining a healthy and quality final product; that said, the legislation, controls and safety standards implemented in the GMP (Good Manufacturing Practices) for each of the production stages will be explained. Based on the analysis of the production process carried out at Versailles, a plan will be proposed to adapt the improvement process in accordance with GMP criteria at the stages where intervention is needed and to include processing methods. Finally, the various economic, social, environmental and cultural benefits of the Versailles farm will be made known by suggesting good manufacturing practices as a sustainable production strategy, aimed at specialty coffee and maximum bean quality [2].
