In this sense, this project aims to design a guide that proposes business ideas that adapt to new market conditions by writing a document in monograph format for dissemination in the academic community, students and graduates. This under the investigation in the literature in specialized databases and information collected in primary secondary and tertiary sources to identify the economic conditions of Colombia as a consequence of the pandemic and the ventures that may emerge as successful in this time of juncture, in addition, They will describe the arguments that generate the possibility of success in the studied ventures, in order to support entrepreneurs who must adapt to the current situation and future entrepreneurs who are interested in this information to start in the business world.

In the research process that was developed, the following general objective was formulated "To determine the viability of establishing a franchise point of healthy fast food of the Go Green brand in the city of Ibagué for the year 2021", which was solved Through the execution of several studies that support the conclusions of the process, these studies were based on the market to identify the internal and external environment in which the restaurant would be, technical to know the installed capacity of the restaurant, organizational to leave parameters of the structure and personnel to be needed and financial to identify the viability of the proposal.

Oils and nutrients are extracted from plants and added through nanotechnology, improving the health and quality of life of consumers. In addition, it is a fourth-range product, ready for consumption, this makes it easier for the consumer to prepare their food and saves time in their daily routine. With this business model, we want to generate an impact in areas of unemployment and boost the agricultural sector in the region, through fair and inclusive trade to contribute to the development and sustainability of the Tolima region. At the same time point to current trends, some of them are the consumption of functional foods that are beneficial to the body and that allows the consumer to improve their health and quality of life. Additionally, the product has added values such as the addition of omega 3 and the prolongation of the fruit's shelf life, which allows it to have a competitive advantage in the market.
