Within the wet benefit of the coffee production process, coffee honey waters are produced, the main residue of this activity. Through the process of anaerobic co-digestion, this study seeks to provide a safe alternative for the final destination of this material, which as a result will produce methane, which can be used within the same productive activities and / or domestic use. As a result, the mixtures made were productivity 2814.70, 696.95, 955.95 and 409.03 CH4 Liters per Kilogram of removed volatile solids. These productivity was evaluated by applying the modified Gompertz model.
