To this end, this proposal proposes an exploratory-descriptive and proactive methodology to promote the advantages obtained by adding value to the cocoa liquor of the San Bernardo Tourism Corporation - CORPOSANBERNARDO (CSB). In order to obtain satisfactory results, it is necessary to consult primary sources of information, communication with farmers, and secondary sources such as databases and information from cocoa guilds in the region in order to obtain an overview of the current situation of farmers, as well as the external and global situation of the production processes involved with cocoa as a raw material. The result of this proposal will be an alternative for adding value to the production process of cocoa liquor in the San Bernardo Tourism Corporation - CORPOSANBERNARDO (CSB).
- PublicaciónAcceso abiertoEstudio de las diferentes alternativas de plásticos biodegradables a base de componentes agrícolas para la sustitución de los plásticos derivados de petróleo en la industria de alimentos(Universidad de Ibagué, 2022) Martínez Luna, Paola Andrea; Roldan Molina, Paola Andrea; Salazar Camacho, Natalia Andrea; Sánchez Echeverri, Luz AdrianaThe presence of plastic on the planet has reached quantities with which humans are already unable to cope, it is said that America, Japan and the European Union are the largest producers of plastic waste per capita and only 9 percent of the 9.000 million tons of plastic produced in the world has been recycled (Zúñiga, 2019). In its latest environmental report, the United Nations (UN) revealed some figures worldwide, showing that 300 million tons of plastic waste are produced annually. and it is estimated that about 13 million tons of plastic are poured into the oceans, affecting biodiversity, the economy and people's health (Zúñiga, 2019). The global crisis of plastic pollution will continue to worsen unless all people become more aware of the real cost they represent to nature and people (NationalGeographic, 2019), for this reason the need for action to intervene in the reduction of this problem arises. This research proposes to carry out a study on the different alternatives of bioplastics based on agricultural components, for the replacement of petroleum-based plastics in the food industry, especially bags and packaging.
Simultaneously, and due to the worldwide pandemic caused by COVID-19, farmers in the department of Tolima have suffered losses in their crops due to the impossibility of selling their products on time. Therefore, this project seeks to answer the following research question: Is it possible to generate a value-added food product based on vegetables from the department of Tolima through a dehydration technique? To this end, from the methodological point of view, an exploration of the market of creams and soups in the city of Ibagué was carried out, the product with the highest added value was formulated through the solar dehydration technique, the acceptability of the formulations made was evaluated through a sensory evaluation and, finally, the technical study for the elaboration of these formulations was carried out. According to the results, it was demonstrated that there is a great variety of products in the cream and soup market, led by brands such as Knorr, Magi and La Sopera, it was possible to formulate a vegetable cream by means of a one-factor experimental design with three levels, the factor to be varied being the flour used (arracacha, plantain and wheat flour), and it was determined that the plantain flour cream was the one that obtained the greatest general acceptability by the panelists. Finally, the technical study allowed estimating a total product cost of $ 8,068 pesos, and a cost per gram of final product of $ 112.05 pesos.
- PublicaciónAcceso abiertoPropuesta para el fortalecimiento de las actividades de comercialización y distribución de los productos provenientes de los pequeños productores del Cañón del Combeima(Universidad de Ibagué, 2021) Camacho Varón, Juan Camilo; Bernal Torres, Juan Pablo; Sánchez Echeverri, Luz Adriana; Salazar Camacho, Natalia AndreaWe are currently living a historic moment at the global level, the presence of the Covid-19 pandemic in our usual contexts has changed our dynamics of interpersonal, social and economic relationships. This pandemic has brought with it multiple questions, which need to be analyzed taking into account its current impact and the repercussions it may have on the agri-food sector, both on supply and demand. At this critical point, it is imperative to guarantee possible interruptions in the food supply chains at the national level with the sole purpose of guaranteeing the supply with the required sanitary guarantees, avoiding food crises in countries that are already experiencing difficulties at the level of the food and nutrition security, and reducing the overall negative impact of the pandemic on the global economy. However, the situation could worsen as a result of logistical difficulties in supply chains, due to movement restrictions within the country, likewise, movement restrictions can prevent farmers from accessing markets and consequently provoke food waste, causing farmers not to have the possibility to sell their products or in local markets and other commercial establishments, due to their temporary closure, ending this, in a high cost of labor due to shortages personnel and the temporary cessation of production. Based on the above, this research work allows the Combeima Canyon community, the target group for observation, the possibility of improving safety in production processes, with prevention activities in the chain of contagion of Sars-cov- 2, but above all to provide them with a proposal to strengthen the marketing and distribution of their agricultural products, based on current documents, standards and reports and with academic support.
