The study was performed taking into account the repercussions of the situation mentioned previously such as business loss, and enviromental impact derivative from the material waste. The study was developed in manufacturing footwear business in the city of Ibague during the month February and March. Using various collection methods, business information was obtained that was processed and analyzed to answer the research question and meet the approved objective. As a result of the study, it was found that the factors that most generate leather unproductivity are given by the imperfects present in the material (soreness, burns and pickets on the skin), operator actions and work conditions. Based on the results found, general recommendations were made to improve the productivity of the sector in the city of Ibagué.

This project addresses the problem of estimating the environmental performance of postharvest logistics operations in the Agrisupply chain of avocado hass in the Tolima ‘ACAHT’. By using the following methodologies as guides: PAS2050 (British Standards Institution , 2008), and “The water footprint assessment manual: setting the global standard” (Hoekstra, Chapagain, Aldaya, & Mekonnen, 2011), the estimations were made for the value of the Carbon Footprint (CF) and the Water Fooprint (WF). To estimate the CF, the amount of GHG in the transport operation during its respective combustion process, and in the packing stage where electricity is used in the selection and classification of the fruit was evaluated. With regards to the WF, the operations that use blue water were assessed. Firstly, during the post-harvest stage where a pre-washing takes place and subsequently in the fruit packing stage of the washing process. The value of the indirect use of water by the operators and administrative workers, as well as the washing of equipment was also determined and assessed. The results obtained in the ACAHT were contrasted with the same indicators reported in different avocado exporting countries. Finally, the potential advantages that Colombia could obtain in this matter compared to its international competitors were explored.

As a result of the process of globalization, industrial activities must be more productive and competitive, which has forced countries to implement technical and economic measures in order to make their products competitive in any national or international market (Neira, 2015). The sugar industry is no stranger to this trend, and in response to this, it tends to work with an ideology oriented towards continuous improvement, in order to ensure that all its processes comply with the highest quality standards. One of the aspects that are of special monitoring at the plant level in this type of industries, due to its impact on production costs, is the non-conforming product that is evident in the packaging area. Knowing the factors that generate this source of unproductivity is a determining factor in the design of actions that avoid repetition. Therefore, this study addresses the problem of increasing sugar reprocessing, derived from the nonconforming product in a sugar mill located in the northern area of the department of Valle. For this purpose, in the following project an analysis of the nonconforming product was performed as a factor of unproductively using the Lean Six Sigma model and the DMAIC method tool (Define, Measure, Analyze, Improve and Control) with which the problem was diagnosed and in turn, design strategies and actions for improvement. In accordance with the above, it was identified that the study to be developed was of a quantitative-qualitative nature under a deductive approach, which allowed identifying and characterizing the problem, to give rise to the design of improvement actions. In order to obtain the data, interviews were carried out with the personnel of the area under study at the Ingenio, and direct observation of the periodic production reports was also carried out. The data obtained was reviewed together with the food engineer in charge of the packaging area to find the factors associated with the occurrence of the phenomenon, as well as to give priority to their intervention. The subsequent analysis of the information was supported, in turn, in tools such as cost-benefit analysis and Pareto analysis, with which alternatives for improving the Company were designed, in the critical aspects that were identified.

- PublicaciónSólo datosCitizen participation in the design of public policy through ICTs in Colombia(Cuadernos de Administración, 2018-06-27) Bermeo Andrade, Helga Patricia; Calderon Pinedo, Mónica; González-Bañales, Dora; Hernández, IvánThe growing development and social appropriation of ICTs nowadays represent a means that facilitates the participation of citizens in the design and management of public policies. The objective of this research was to assess the contribution generated by the use of a digital platform as a means to design and execute public policies aimed at strengthening the productive apparatus in the tourism and cultural industry of the Tolima region within the “Tolima Vive Digital”-TVD (Tolima Lives Digitally) project developed between 2013 and 2014 within the framework of the “Vive Digital” (Live Digitally) initiative by the National Government. Through an evaluative research model, structured surveys and in-depth interviews were applied to beneficiaries linked to the tourism and culture sector in the region, as well as to facilitators-experts in the operation of the platform. The results of the evaluation show the positive contribution of ICTs to the processes of citizen participation in the design of public policies by facilitating the participation and inclusion of citizens from remote regions, by enabling a more efficient systematization and integration of citizen demands and by generating a new communication channel between Government and citizens. In this way, the experience of the Tolima region represents a reference point for other government managers, and becomes a complementary contribution to the evaluation of the strategy for the digitalization of the public service in Colombia.
- PublicaciónAcceso abiertoDeterminación de las condiciones de proceso para el aseguramiento de una de las variables críticas de calidad en el café industrializado: El caso del contenido de Ocratoxina A(Universidad de Ibagué., 2018) Cañón Leonel, Edna Margarita; Bermeo Andrade, Helga PatriciaEste trabajo de investigación fue diseñado para estandarizar las condiciones de tostión de café y generar las condiciones que permitan alcanzar la mayor reducción de Ocratoxina-A en el Café Tostado a nivel de laboratorio. Para su desarrollo, se recurrió a un diseño metodológico experimental de doble etapa: exploratoria y confirmatoria. En la etapa exploratoria, se procedió con un diseño factorial 23 con tres variables: calidad del café (consumo y pasilla), temperatura (baja: 215 ºC y alta: 235 ºC) e intensidad (media: 50% y alta: 70%). Los resultados de la etapa exploratoria, obtenidos con la ayuda de la herramienta estadística ANOVA, evidenciaron que la variable respuesta [% de OTA removida], se movía en su valor óptimo a una combinación en la tostión a temperatura alta e intensidad media. A partir de este resultado, se avanzó en la etapa confirmatoria con el análisis de la variable respuesta, bajo las condiciones ideales identificadas, pero incluyendo el % de OTA presente en las muestras entrantes de café verde (tres rangos). Los resultados del trabajo experimental sugieren que el mayor porcentaje de remoción de OTA en las muestras ya tostadas, se obtiene al combinar la temperatura de 235 ºC y la intensidad de 50 %, utilizando muestras de café verde (consumo o pasilla) con un contenido de OTA inicial no mayor a 30 ppb. Bajo estas condiciones de tostión recreadas a nivel de laboratorio, se logra el control de esta variable de calidad en el café soluble y se cumple con el nivel máximo permitido de OTA presente en el café soluble, ya establecido por la normativa nacional e internacional.

This project was focused on the design / adaptation of the instruments that might support the transfer and technological appropriation of the SONG model, in addition including the validation work of its use, with members of ICT cluster of Tolima.

La investigación fue realizada siguiendo la metodología de Análisis de Redes Sociales, a través de la cual, se logró entender cómo era el flujo de información al interior de la red y los motivos que llevaban a los actores a cooperar entre sí. También se lograron identificar los tipos de innovación que tenían lugar dentro de la red, estableciendo a la vez, su institucionalidad. El resultado de esta asistencia de investigación sirve de base para el proyecto de investigación macro al cual contribuye, como referente para el diseño de políticas y estrategias que favorezcan el surgimiento o fortalecimiento de redes territoriales para la innovación en el sector bajo estudio.

The project methodology integrates the application of Network Analysis, through which, it is intended to understand how the information flow within the network is and the reasons that lead to cooperation among avocado agrochain actors, as well as to characterize the types of innovation that take place within the network, establishing at the same time, its institutionality. The result of this research assistance will serve as a basis for the macro research project to which it contributes, as a reference for the design of policies and strategies that favor the emergence or strengthening of territorial networks for innovation in the sector under study.

Yulima variety(Food Science and Technology, 2018-12-01) Sánchez Riaño, Andrea Milena; Bermeo Andrade, Helga Patricia; Valenzuela Leal, Claudia PatriciaThe effect of four hydrocolloids on the physico-chemical, bioactive and rheological properties in sweetened mango leather sheets of the Yulima variety were analyzed. Parametric and non-parametric statistical tests were done to analyze the differences among samples (four of treatment against two of control). The findings show significant positive effects caused by the hydrocolloids made from Gum Arabic (AG), Maltodextrin (MTD) and Citric Slow Pectin (CSP) on leathers’ quality and appearance attributes. Only the Carboxymethylcellulose (CMC) reported adverse effects on the mango leather's quality; therefore, its use on an industrial scale is not recommended for this line of processed product.
